Introduction

はじめに

Kappo on Nishi-Kiyamachi, Kyoto, since 1928.

A kappo restaurant on Nishi-Kiyamachi, Kyoto, founded in 1928 (Showa 3) beside the Takase River. The name combines "kuma" from founder Kumasaburo Kurisu and "tan" from Tan'ei, where he trained; since opening it has kept its counter style of cooking to order in front of guests.
